COLLEEN CANNON's MARVELOUS MENNONITE MUFFINS - Oat Bran/Carrot
***Note- I use ½ cup whole wheat flour and ½ cup white
***You will save TONS of time if you use a food processor to chop up the carrots, apple, and later, use it to blend up the eggs
1 cup flour 2 cups grated carrots
1 cup rolled oats 1 apple, grated
½ cup oat bran ½ cup coconut
¾ cup sugar ½ cup raisins or currants
1½ tsp baking soda 3 eggs
2 tsp cinnamon ¾ cup canola oil
½ tsp salt 1 tsp vanilla
Mix together the dry ingredients. Fold in grated carrots, apple, coconut and raisins. Beat eggs. Add oil and vanilla and blend into dry ingredients. Scoop into muffin tins. Bake at 375° F for 20 minutes.
Make 12 large muffins.
